«Tørking av gjedde
Tidligere er i denne serien omtalt hvordan befolkningen på Finnskogen hadde tørket mort som en viktig del av matreserven. Men flere andre magre fiskesorter har også blitt konservert på samme måte. Olaus Magnus sier i sin «Historia om de nordiska folken» fra 1555: «Framför allt äta de nordiske folken torr fisk, såsom gädda, gos (gjørs), braxen (brasme), lake och den fisk man på gotisk tungemål kallar sik».
Gjedde har spilt en stor rolle som tørrfisk også for mange i vårt distrikt. Presten Axel Christian Smith ga i 1784 ut «Beskrivelse over Trysild Præstegjeld», og fortalte om konserveringen av gjedde: «Gjedden pleier man tørre, da den tilforn, vel virket, smager ganske god. Men skulde man fortære den, efter at den haver hængt paa Stavburet nogre Aar, saa maatte man først bestille sig Puntlæders Mave».
Fra nyere tid har vi beskrivelse fra Aurskog (Ole Sauge [1892-1975]) om hvordan de behandlet gjedde i Vålerelva: «En del av fisken var kløvd langs ryggen og lagt i lett saltlaka i 2-3 dager og så satt i spenn ved hjelp av tre pinner, så fisken sprikte mens den han til tørk i sørveggen på bua. Etter 8-14 dager vart fisken hard og tørr og lagt i haug inne i bua. Gjedda var ettertrakta i vintertida.
Men sjøl i dag, med frysing som den helt dominerende form for konservering av fisk, er det noen som ser verdien i å ha en del tørkete gjedder hengende på stabburet. Joseph Bakken i Tufsingdalen fisker hver vår gjedde i Tjønnan, det 3 kvadratkilometer store deltaområdet ved Tufsingas utløp i Femund. Med garn blir det i løpet av ei uke tatt opp 100-300 kg. gjedde på 2-5 kg.
Fisken blir behandlet slik som omtalt fra Aurskog. Det er viktig å dele den opp etter ryggen, fordi det er her kjøttet er tykkest, og tørkinga må komme raskest mulig i gang. Det er også viktig å ha godt vær med sol og vind, slik at det i løpet av et par dager dannes ei beskyttende hinne. Har fluene begynt å komme, må det følges med, så de ikke får lagt egg.
Etter to uker med god tørk kan gjeddene henges inn på stabburet. Holdbarheten er nå nærmest ubegrenset. Joseph har sjøl hatt fisk som hadde hengt i 40-50 år og fortsatt var brukbar.
For Joseph Bakken ligger mye av gjeddefiskets verdi i at han ved det sikrer gården et forråd av holdbar mat. Det er trygt å vite at hvis annen matforsyning skulle svikte, henger det 30-40 gjedder på stabburet. Hver av dem representerer et måltid for minst 5-6 personer.
Når gjedda skal lages til blir den delt opp i ca. 5 cm brede biter som legges i bløt natt over. Kokinga kan ta opptil 2 timer hvis en ikke har trykkoker. Da greier det seg med mindre enn en halv time.
I dag er det mest som fest- og helgemat gjedda blir brukt, og som skikken er i Østerdalen skal den serveres sammen med rømmegraut. Tidligere hadde tørket gjedde også en funksjon som nistemat under turer i fjellet. Den ble da brukt som den var eller bløytet opp. Sammen med flatbrød er dette mat som både er næringsrik og lett bære med seg.»

Jo satt på en hoggestabbe med noe som kan minne om ei vidjespenning i hendene da fotografiet ble tatt. Joseph sto ved sida av ham med ei nyfanget gjedde i hver hand. Begge var kledd i islendere (strikkegensere med spettenmønster). Jo hadde vadmeksbukser på seg. Det hadde sannsynligvis Joseph også, men han hadde dratt en overall av mer vannavstøtende materiale utenpå, åpenbart for å skjerme klærne sine fra det kalde vannet som fulgte med garna. Mens Jo var barhodet hadde Joseph to strikkeluer utenpå hverandre.
