En jarstein av støpejern brukt på dypsagn. Dypsagn består av omtrent et hundre favner langt fiskesnøre.
Jarsteiner er søkkelodd som festes til garn og snøre for å få snøre hurtig ned til ønsket dybde, eller for å holde fiskegarnet til bunnen.
De eldste jarsteinene som det er gjort funn av er fra steinalderen og bestod av enten kleberstein eller sandstein med furer. Furene gjorde det enklere å feste snøret og samtidig beskytte det mot steiner på havbunnen. Etter hvert ble det laget ulike varianter av jarsteiner med ulik form og fasong, men stein var fremdeles det vanligste materialet og ble brukt til søkker langt frem mot vår egen tid.
En gang i jernalderen begynte man å ta i bruk en ny type søkker, med en langstrakt form som smalner av mot et butt hode og et gjennomgående hull, i tillegg til furer. Mange av disse søkkene er laget av kleberstein og sannsynligvis er det disse søkkene av kleberstein som har vært forbildet for de senere søkkene av jern – og grunnen til at disse ble kalt jarstein. De eldste jarsteinene av jern ble smidd av lokale bygdesmeder, senere ble det vanligere å kjøpe jarsteiner av støpejern med oppgitt vekt.
