Olav V ble født i England, og var sønn av prins Carl av Danmark (senere Haakon VII) og prinsesse Maud (datter av Edward VII av Storbritannia).
Han ble døpt Alexander Edward Christian Frederik og var prins av Danmark, men fikk navnet Olav da hans far ble norsk konge i 1905.
Olav var en allsidig idrettsutøver. Han hoppet på ski i Holmenkollen og deltok i flere regattaer. Under de olympiske leker i 1928 i Amsterdam vant han gullmedaljen i 6-meter-klassen med Johan Anker som rormann, og han var en aktiv seiler til langt inn i sine eldre dager.
21. mars 1929 giftet han seg med sin kusine, prinsesse Märtha Sofia Lovisa Dagmar Thyra av Sverige, født 28. mars 1901, senere kronprinsesse Märtha av Norge. Kronprinsessen døde allerede 5. april 1954.
Kronprins Olav var den første norske tronarvingen siden middelalderen som vokste opp i Norge, og han gikk på offentlig skole. I 1921 tok han examen artium på reallinjen ved Halling skole i Oslo. Tre år senere gikk han ut av Krigsskolen. Kronprinsen fortsatte med studier i økonomi og juss ved Universitetet i Oxford.
2. verdenskrig
Under 2. verdenskrig oppholt kronprinsen seg i London sammen med Kongen og Regjeringen. Han ble utnevnt til forsvarssjef den 30. juni 1944, og var dette frem til 15. juli 1945. Når krigen var over var han første representant for kongefamilien hjem til Norge, da han ankom sammen med 5 statsråder den 13. mai 1945. Han fungerte som kronprinsregent frem til kong Haakon returnerte til Norge 7. juni. Etter krigens slutt ble han en av de høyest dekorerte i Nord-Europa.
Tiden som konge
I 1954 ble kongefamilien rammet av stor sorg da kronprinsesse Märtha døde. Året etter ble kong Haakon syk og kronprinsen fungerte som kronprinsregent. Kong Haakon døde på Slottet i Oslo den 21. september 1957. Den nye kongen var enkemann og måtte gjennomføre sine oppgaver uten en dronning ved sin side. I de første regjeringsårene fikk han god hjelp av sin yngste datter, prinsesse Astrid, og av kronprins Harald. I 1968 ble han tildelt Holmenkollmedaljen.
Han var gjennom sine 33 år som Norges konge en avholdt og respektert monark. Han fikk tilnavnet Folkekongen fordi han ikke var redd for å vise at han i tillegg til å være konge også var av folket. Han kjørte gjerne sin egen bil, og til tross for at han kunne kjøre i kollektivfeltet valgte han å kjøre i feltet for vanlig trafikk. Under oljekrisen i 1973, da biltrafikk ble forbudt i helgene, tok han trikken for å komme seg ut på ski. Han forsøkte til og med å betale billetten sin, men ble fortalt av konduktøren at noen lenger bak allerede hadde betalt for ham.
På sin 70-årsdag i 1973 ble han av den norske regjeringen tildelt landets høyeste sivile utmerkelse, Borgerdådsmedaljen.
I juni 1990 ble han rammet av et hjerneslag, og daværende kronprins Harald måtte overta som regent. I kontrast til Kong Haakon, valgte Kong Olav både å la seg avfotografere og vise seg offentlig i sitt sykefravær. Han var stadig på bedringens vei, men ble likevel aldri frisk nok til å gjenoppta sine offentlige funksjoner. Kong Olav døde 17. januar 1991 på Kongsseteren i Holmenkollen etter å være blitt rammet av et hjerteinfarkt.
I dagene etter hans død og fram til begravelsen opplevde Norge en nasjonal sorg, hvor folk la ned blomster og tente stearinlys utenfor Slottet. Mange plasserte avskjedshilsner i form av brev og kort blant lysene, og alle disse er tatt vare på i Riksarkivet.
Kong Olav er gravlagt i Det Kongelige Mausoleum på Akershus slott i Oslo.
