Da Aksel Taasaas døde i 1993 skrev etnologen Magne Rugsveen følgende minneord i Norsk Knivforenings medlemsblad, Knivbladet (nr. 1 1993):
«Aksel Taasaas (1904-1993) er borte
Aksel Taasaas på Vestre Toten er død, nærmere 89 år. Med han er en lang og sammenhengende familietradisjon i knivmaking og bladsmiing borte. Han var dessuten den siste totningen med røtter langt tilbake i historien som lagde tradisjonelle totenkniver.
Hans far Maurits Taasaas (1880-1963) og bestefar Andreas Flødsveen (1841-1925) drev knivmaking og bladsmiing i stor stil. Den omfattende knivproduksjonen på Toten antas å ha begynt på midten av 1850-tallet. Aksels bestefar var på den tiden 14-15 år gammel. Derfor markerer Aksel Taasaas’ bortgangen slutten på en epoke i knivmakingen på Toten som strekker seg mer 130-140 år tilbake i tiden.
Aksel vokste nærmest opp på knivmakerverkstedet. Han måtte hjelpe til med forskjellig arbeid, særlig trengte faren hjelp til å dra slipesteinen. De råsmidde bladene måtte slipes ned til riktig fasong og se pene ut.
Alt som guttunge begynte Aksel å lage sine egne kniver, men det var særlig i 1930-årene at Aksel drev mye med knivmaking. Da var det vanskelig å få annet arbeide. Etter krigen var det mange år han ikke gjorde kniver, fordi gårdsarbeidet tok det meste av tiden. Men fra slutten av 1960-tallet, etter at han ga fra seg gården, tok han opp igjen bladsmiinga og knivmakerarbeidet for fullt igjen. Aksel har lagd flere forskjellige knivmodeller. Kniven med treskaft og treslire med tilhørende nysølvholker og –beslag har vært en av hans vanligste modeller. Han har dessuten lagd kniver med lærslire og knivskaft av never. Kniver med neverskaft var den vanligste knivtypen hans bestefar Andreas Flødsveen lagde.
Aksel Taasaas hadde sine røtter i et knivmakerdistrikt som i en hundreårsperiode fra 1850 til 1960 var blant de aller sterkeste og største i Norge. På Toten ble det produsert kniver i tusentall og mange familier hadde sitt levebrød fra knivproduksjonen. Aksel Taasaas var dessuten trofast mot en knivmaketradisjon som lagde bestemte og spesielle knivtyper, nemlig Toten-kniver. Han vek aldri fra denne knivtypen. Derfor var han med sitt liv og sin knivmaking med på å befeste Toten-knivens plass i Kniv-Norge. Et av hans høyeste ønsker var at denne knivtypen ikke måtte forsvinne.
